Summer picnics are on their way, leaving everyone wondering “What can I bring?” Here are two recipes that everyone is bound to enjoy.



Rainbow Salsa

Ingredients:
1 can black beans, drained and rinsed

1 can white shoepeg corn, drained

½ green pepper, chopped

½ red pepper, chopped

½ orange pepper, chopped

4 green onions, thinly sliced

4 ounces crumbled feta cheese

 

Dressing:

¼ cup olive oil

¼ cup granulated Splenda® or sucralose artificial sweetener

¼ cup apple cider vinegar

 

Prepare the first six ingredients and place in a bowl. Mix the dressing ingredients and pour over the black bean mixture. Marinate for 2 to 24 hours. Add feta cheese and toss to coat before serving. Dish can be served with baked tortilla chips or low-fat crackers.

A Refreshing Summer Beverage

Ingredients:

½ cup of your favorite fruit juice

1 cup club soda

Twist of lime (to taste)

 

Add fruit juice to a glass of ice. Add club soda and garnish with a twist of lime.
